Your trip starts in Seoul, continues to Busan, and ends with a few nights on Jeju. You should not need to buy another plan simply because you leave the capital—but you should check what your original plan actually covers.

The short answer: A Korea eSIM can work outside Seoul wherever its supported mobile network provides service under the product’s terms. Moving to Busan or Jeju does not itself require a new eSIM.
